Coconut has been carefully toasted for that quintessential nutty, creamy flavour, combined with a subtle hint of caramel belgian chocolate to round out the fruitiness of the sweet pineapple which runs throughout. Inside is a molten core of white belgian chocolate, dark rum and coconut cream, and I've finished it off with a brown butter & dark rum drizzle, to give it that sweet earthiness, and that unmistakable piña colada flavour that is simply made for summer.

Storage
We always recommend eating your cookies as soon as you can, so store them at room temperature for up to 3 days in an airtight container.
If you want to keep the joy going for just a little longer, you can wrap them individually in parchment paper, place in a ziplock bag & freeze them for 2-3 months. Simply thaw and enjoy when the mood takes you.
And if you want to go full elite cookie mode, why not warm them up in the oven at 170C for 4-7 minutes? You won't regret it.
